Tomato Soup

A favorite in our family is tomato soup and throughout the Winter I usually make a pot of it each week. Whenever I serve tomato soup I am usually asked for the recipe. Since I have never had a recipe I promised Tracy I would write down what I did the next time I made it and place it on my blog.

French Onion Soup

French Onion Soup
Onion Soup is a wonderfully comforting food for me. Deeply flavored with tons of sweet, mild onions; simmered in a beef broth and served piping hot with croƻtons and cheese. Yum Yum!

It is sad when I have a bowl of “bad” onion soup because it is so easy to make good French Onion Soup. The soup should have depth of flavor and tons of onions without being oniony. I ordered a bowl in a restaurant recently and was inspired to go home and make some soup that I could enjoy. My restaurant bowl was beef base with cooked onions. I could actually taste the individual flavors of beef and onion in the watery mass of yuk the restaurant had the gall to charge me 8 bucks for. Shame, I don’t mind paying 8 bucks for fifty-five cents worth of food but I want my other $7.50 in ingenuity and presentation.

Today, I cut up six onions. Though tears cornered my eyes a couple of times, the soup is delightfully mild and deliciously “sweet”, full-bodied and velvety. I used a commercial base but added a bit of time, some care and a little know-how to make a soup worth 8 bucks a bowl. [...]

Borscht or Beet Soup

Beet Soup
I know people don’t like beets but I am not sure why. Beets are good for you, colorful, easy to prepare and have an earthy flavor. I like beets, I like beet tops even more, especially when they are young and tender and freshly picked from the garden. (Another post) This is about beet soup or borscht.

The first time I made beet soup was a number of years ago when I cooked weekly meals at our church on Wednesday evenings. There were usually about 200 people in attendance at those meals. This particular evening a group from our church were returning from Russia to share stories of their travels. I was asked to make a themed dinner and so I did. I started with Borscht and it was delicious! It was then I encountered the real prejudice that people had against beets as I had a lot left. [...]

Onion Soup Mix

Short post. As we approach the holidays it occurs to me a lot of people use Onion Soup Mix for various recipes. This is a good approximation of the packaged dip mix if you don’t have one of those little packets for a recipe? Mix up the following which is the equivalent of 1 packet.
