There is a wonderful Mexican Bread called Bolillo and they are great for tortas, and the subject of this post the wonderful Molletes. Simply delicious a Mollete is a Bolillo, relative of a French Baquette, piled with salsa, frijoles and queso and cooked for a bit until all is bubbly and heated through. As the ingredients are few it is very important that you use only the best, most flavorful ingredients.
Make your own refried beans with freshly cooked beans (a can works too) and salsa, venture into a panaderia and buy fresh bolillos. Skip the Rosarita pasty refried stuff and the overpriced picante sauce and go for the goo stuff! Fresh, vine ripened tomatoe, onions and chilies, frijoles and queso. Don’t get uptight about the bacon fat, it will make the dish excellent.

OK, first I have to admit Hot Tuna – I can’t stand the stuff! Frankly, I don’t like cold tuna or any other fishy tasting stuff.
I went looking for a recipe but did find anything to that appealed to me. I guess when you don’t like something it’s difficult to get excited about it. Sterling called and said he would be coming to town for the evening so he could attend a friend’s Halloween party. I got busy and made his very favorite cookie – Snickerdoodles!
For me I choose anything chocolate but this cookie has always been his fav. I think it always bothered him that I consider this an Autumn cookie and never made it in the the rest of the year; maybe that’s why I wasn’t into them, because of my silly rule.
This was the recipe my Grama Rosie used for Snickerdoodles. The only thing I have changed is that I use butter and she used margarine. I also had to adjust the flour to accommodate the extra moisture in butter that is not in shortening and margarine.
