I love to stuff tomatoes, eggplant and zucchini as either a delicious side dish or a light meal. The idea of stuffing a vegetable reduces the effort at serving time as you cook and serve both the starch and vegetable in one dish. The possibilities are nearly limitless when choosing vegetables to stuff; small tender onions, tomatoes, courgette, aubergine, potatoes and sweet peppers.
My basic stuffing for vegetables is rice and vermicelli and gently spiced with paprika and cayenne. If you are not able to find Fideo Cortado in the Latin Food section of the market then use vermicelli and break it into pieces about 1/2 inch long.
