Delicious Mollete

There is a wonderful Mexican Bread called Bolillo and they are great for tortas, and the subject of this post the wonderful Molletes. Simply delicious a Mollete is a Bolillo, relative of a French Baquette, piled with salsa, frijoles and queso and cooked for a bit until all is bubbly and heated through. As the ingredients are few it is very important that you use only the best, most flavorful ingredients.

Make your own refried beans with freshly cooked beans (a can works too) and salsa, venture into a panaderia and buy fresh bolillos. Skip the Rosarita pasty refried stuff and the overpriced picante sauce and go for the goo stuff! Fresh, vine ripened tomatoe, onions and chilies, frijoles and queso. Don’t get uptight about the bacon fat, it will make the dish excellent.

Petra Mediterranean Restaurant has amazing pita bread! Really, the food is great but the bread is incredible! Of course, hot, freshly baked bread is always delicious and this is Petra’s calling card. I almost always stop by Petra’s when I’m in San Luis and have a grilled vegetable sandwich on a freshly baked pide. Very often I also buy a stack of bread to take home to scoop up Hummus or Labneh or to make Vegetable and Hummus Pizza on Pita Bread.

This is a seriously delicious, easy to prepare, healthy and delicious light meal or snack. Adjust ingredients or swap vegetables to your liking and enjoy.

Middle Eastern Pita Bread



On my list of life’s wonderful things is freshly made bread. I have been baking bread since I was a child. I find the process relaxing, the finished product healthier for my family. I figured it out recently that it cost me about 30 cents to make a loaf of bread, wow! When I am at home, I just start some dough and go about my business, a bit later I pan it and we have fresh bread for the next few days.

Fresh bread just feels good. Sterling and I are bread lovers but Mia is not, however when I bake bread she magically becomes a fan of the stuff. [...]

Mia and I visited a restaurant today and I ordered the roasted vegetable salad. It was delicious and the vegetables were perfectly roasted and deliciously sweet. It brought to mind a vegetable sandwich, which I love and admit, is a selfish indulgence. Most people like some meat in their sandwich but a perfectly crafted sandwich of vegetables it just fine in my book.

Ratatouille Niçoise Sandwich is inspired by the classic Ratatouille Niçoise. Ratatouille is a blend of tomatoes, garlic, onions, zucchini, eggplant, bell peppers, carrots, marjoram and basil, or a mix of green herbs like herbes de Provence. Classically the eggplant and zucchiniare prepared by cutting into slices, something like, 1/2700 of an inch thick, and layering them, with a sauce made from the remaining vegetables, in a casserole dish and baking until tender. Mia and I tried out a new Middle Eastern restaurant we had heard about. Mia would have preferred to skip it for something more mainstream I think. We had been driving a bit, so when we hit the restaurant Mia told me to order something for her and dismissed herself for the restroom. Knowing that she thinks Middle Eastern is a little too grassy/grainy I chose Kifta, a Lebanese version of meat loaf. She loved it! [...]

Bacon & Egg Panino

Bacon & Egg PaninoOn Sunday Morning, Mia and I like to watch Sunday Morning on television. Most times we have a cup of coffee and maybe some cake whilst watching the show but other times I like to make a panino to start our day. Crispy bread stuffed with bacon and eggs make a wonderful start to the morning.

This panino is definitely a fusion of cuisines; made with crisp Italian artisan Ciabatta and finished in a sandwich press but filled with classic American Bacon and Eggs. Yummy!

Lebanese Style Garlic Sauce

Lebanese Style Garlic Sauce is a delicious, very garlicky, sauce which is a perfect compliment to falafels, schwarma and much needed on any mezze. Eat it with tabbouleh and you won’t have a breath problem because the parsley cancels the garlic. :)

Garlic sauce is very easy to prepare and the end product is much like mayonnaise. In fact, you may use this garlicky sauce on sandwiches in place of mayonnaise or spread it on a chicken breast prior to baking. Great Stuff! [...]
